The New Sheridan Chop House is a lively steak house bistro offering a selection of grilled prime steaks, eclectic fresh seafood and daily vegetarian specials. Executive Chef Ross Martin focuses on the highest quality local ingredients prepared with French technique and American flair. Paired with an award winning wine list, the New Sheridan Chop House is sure to please the most discriminating palates.
The Chop House menu also reflects ecologically sound purchasing, only using non-threatened fish species and seafood, which is flown in three times weekly, and organic, hormone free chicken and duck that is free range or Amish raised.
Another exciting menu offering is a cheese course. A selection of three cheeses is offered to diners nightly, with the cheese varieties rotating every few weeks. Sample selections might include Humboldt Fog chèvre from California, manchego (a Spanish aged sheep’s milk cheese), or Cabrales (a Spanish blue cheese).
The Chop House is also very proud of its wine list. The 125-plus-bottle list is relatively modest in its number of selections, but well rounded to complement the menu. Although not large in size, the list is not without a number of very notable wines, such as Champagne from Dom Perignon and Chardonnays from Merryvale and Kistler. On the red side, the list includes the venerable Penfolds Grange from Australia and Sassicaia from Italy, and distinguished California producers such as Cakebread, Chateau Montelena, Etude, Far Niente, Fisher, Jordan, Merryvale, Opus One, Shafer, Silver Oak, Spottswoode, Twomey and Viader.
A dessert menu that often includes decadent choices like Neapolitan profiteroles, banana Tarte Tatin, crème bruleè, ice creams and sorbets accompanies a fine selection of dessert wine, port, bourbon, blended and single malt Scotch, Cognac and brandy.
